Bought everything for this last night and put it together for supper tonight. It sounds good. Hopefully it will be.

edit* I switched the andouille sausage with hot italian sausage.

I don't see a reason you couldn't do it without shrimp. Maybe you could substitute another meat for it (though I'm not sure what).

I probably would just eliminate the shrimp, and leave the rest of the recipe in tact. It sounds yummy. You'll have to let us know how it comes out!

I'm not a huge andouille fan either. I'll probably try it with mild sausage first, since Jim isn't much into the super spicy foods.

It turned out REALLY well, though the spicy sausage made it a bit too spicy for Kim.

Leaving out the sausage won't hurt anything.

Mmmmmmmmmm. I wonder where my jambalaya recipe is? Mine called for shrimp and sausage, and I usually substituted more shrimp for the sausage! Spicy-goodness!
