I'm not one to pat myself on the back, but this one turned out pretty well.
We decided that we'd go with chicken for supper tonight, but I was tired of baked chicken (it's easy).
We swung through the grocery store (Martins ROCKS for those of you folks with one near by). Picked up 2 portabella mushroom caps.
Sliced up the caps, and sweated them with onion and garlic in some olive oil, butter, and kosher salt.
Let them sweat for a while, then added the chicken in with them to cook.
Mixed up a packet of chicken gravy (3/$1! hells yeah!) and covered it all with the gravy to let it cook.
Let everything simmer together.
Cooked up some angel hair pasta, and threw it all together.
Turned out quite nicely, with very little seasoning necessary.
